Eggless Sponge Cake

I wanted to make an eggless cake for my Tiramisu and I was in a crunch for time. I came across many recipes with baking soda, baking powder, soda etc. I was surprised when I saw one of the ingredients, little bit hesitant in the beginning. Finally I gave it a try and proved my self wrong. My family also agreed the same and my husband kept asking for more cake and THAT is a green signal for me.
Ingredients:

All purpose flour- 1.5 cups
Baking Soda – 1tsp
Sugar- 1Cup
Salt- ½ tsp
Oil- 5 tbsp
White Vinegar- 1 tbsp
Vanilla essence – 1 tsp
Cold water – 1 cup


In a mixing bowl sift flour, salt, sugar and baking soda. Mix well. Add in Oil, Vinegar, Vanilla Extract and Water. Mix the wet and dry ingredients together with a hand blender until there are no lumps. Pour batter into a greased baking pan . Bake at 350 degrees for about 30 mns. Poke a toothpick or fork into the center. If it comes out clean, the cake is ready. Remove pan from the oven and cool for about 5 minutes before flipping it over onto a platter.


Now I know Vinegar is good for cakes too. After mixing the batter, I tried it and I couldn’t taste the vinegar, that gave me some hope. But waited to confirm on that till the end. The result is good.

Great recipe! Thank you for sharing this to us. I would surely try this as my daughter is allergic to eggs, so having a recipe for eggless cake is really wonderful. I bet this cake would go really well with a hot cup of coffee made from one of my commercial coffee makers Kudos!

I have been looking for eggless cake recipes for months now. I have tried the ones with condensed milk but find the cake turns out more rubbery than soft. I have a really good recipe using oil and milk but it requires a lot of oil and I was looking for something slightly more healthy. Ive never made a cake using vinegar so I thought I would try making this cake using half the quantities in case it goes wrong. Soo I have JUST finish making this cake, and I must say, it is ABSOLUTELY AMAZING! It is really soft, its not too oily like my previous recipe and its not rubbery either! I would definately recommend this recipe to everyone! I slightly changed it by adding 1/2 tsp baking powder and 1/2 tsp bicarbonase of soda.
The cake is soo moist im quite shocked! This recipe is definately moving to the top of my basic cake recipe's folder!! Thanks for posting! :-)
